Creamy Zucchini Pasta
I used to always order spinach and cheese ravioli with alfredo sauce. Then I became lactose-intolerant. Now I have creamy zucchini pasta and I am complete again.
☆1/2 cup cashews (soaked in water for at least 6 hours)
☆1 large zucchini (steamed)
☆1 clove garlic
☆juice from 1/2 lemon
☆1/4 cup full-fat coconut cream
☆pepper + pink salt
☆pasta of your choice
1. Soak cashews in fresh water for at least 6 hours. Strain and rinse before using.
2. Slice zucchini into disks and steam in the microwave or in a pot.
3. Add all of the ingredients in a blender. Blend on high speed for 3-5 minutes until creamy.
4. Cook pasta and mix it all up!
